Brinjal thickly sliced 2
Mustard seeds 2 teaspoon
Oil 2 tablespoon
Garlic 4 cloves
Green chillies 2
Salt to taste
Turmeric powder 1 teaspoon
Red chilli powder 1/2 teaspoon
Fresh coriander leaves chopped for garnish
Heat one tablespoon in a non-stick pan. Add brinjals and saute till brown.
Remove from heat and set aside. Grind garlic and green chillies into a paste using very little water.
Heat the remaining oil in a non-stick pan. Add garlic-chilli paste, salt, turmeric powder and red chilli powder. Mix well and saute for two minutes.
Add brinjals and mix well. Cook on low heat for till tender. Garnish with coriander leaves.
