Chia seeds are among the healthiest foods on the planet. They are loaded with nutrients that can have important benefits for your body and brain. Chia seeds reduce food cravings, help you stay hydrated, lower blood pressure & are rich in omega-3 fatty acids.
1/2 cup chia seeds
2 cups coconut milk
6 tablespoons unsweetened coconut milk
1 tablespoon unrefined sugar/agave nectar, or more to taste
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/2 cup diced fresh fruit
1 tsp Agar agar powder
Place chia seeds in a bowl.
Whisk coconut milk, sugar, vanilla extract, cinnamon, together in a bowl;
Add agar agar powder and gently heat over stove. Keep stirring the mixture till there are no lumps left.
Pour over chia seeds and stir well.
Pour into a mold.
Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl with plastic wrap and refrigerate overnight.
Once it has set, turn the pudding out onto a serving dish.
Top with fresh fruit.
